Don't throw away any more of those overripe bananas! This seriously delicious, moist, gluten free banana cake barely lasts a day in our household! It's even perfect to take on long training sessions. Add some chocolate chips for a real sweet treat!

Ingredients
1 cup gluten-free flour
½ tsp baking soda
Pinch salt
1 tsp cinnamon (optional)
2 eggs
1 cup mashed banana (2 large, or 3 small)
½ cup raw sugar
¼ cup unsweetened apple sauce
2 tbs oil (I use olive oil but vegetable or canola is fine too)
½ tsp vanilla extract
Chopped walnuts (for topping)
Preparation
Combine flour, baking soda, a good pinch of salt, and cinnamon if included.
In a separate small bowl mix banana, eggs, apple sauce, sugar, vanilla and oil. Stir into dry ingredients.
Transfer to lined loaf pan, and sprinkle with chopped walnuts.
Bake at 350*F for 45-55mins or until toothpick or skewer comes out dry when inserted into the center.
Let cool for ~10mins and then transfer to wire rack.
