Gluten Free Banana Bread

Don't throw away any more of those overripe bananas! This seriously delicious, moist, gluten free banana cake barely lasts a day in our household! It's even perfect to take on long training sessions. Add some chocolate chips for a real sweet treat!


  • 1 cup gluten-free flour

  • ½ tsp baking soda

  • Pinch salt

  • 1 tsp cinnamon (optional)

  • 2 eggs

  • 1 cup mashed banana (2 large, or 3 small)

  • ½ cup raw sugar

  • ¼ cup unsweetened apple sauce

  • 2 tbs oil (I use olive oil but vegetable or canola is fine too)

  • ½ tsp vanilla extract

  • Chopped walnuts (for topping)


  1. Combine flour, baking soda, a good pinch of salt, and cinnamon if included.

  2. In a separate small bowl mix banana, eggs, apple sauce, sugar, vanilla and oil. Stir into dry ingredients.

  3. Transfer to lined loaf pan, and sprinkle with chopped walnuts.

  4. Bake at 350*F for 45-55mins or until toothpick or skewer comes out dry when inserted into the center.

  5. Let cool for ~10mins and then transfer to wire rack.
